Sure, the Irish aren’t really known for their amazing cuisine; you go to an Irish pub for the booze, not the food. But, when St. Patrick’s day rolls around, we totally understand if you want to cook up an Irish feast to go with your Guinness.
Boxty is a traditional Irish potato pancake using a mix of mashed and grated potatoes, which are then fried. For some people, that’s enough. But, we’ve hardly stopped there.
You knew we were going to push the boundaries, right?
And we have. We’ve made this boxty super delicious by adding bacon and – you guessed it – some Mad Dog 357 Naga Morich Pepper Puree.
Could you ask for more?
Well, there is that Guinness that you’re craving now, but we can’t help you with that.
1 pound Boiling potatoes, peeled
2-4 tablespoons Butter
2 tablespoons Milk
½ teaspoon Mad Dog 357 Naga Morich Pepper Puree
¼ pound Bacon, chopped
1 large Onion, finely chopped
2 each Eggs, beaten
1 teaspoon Salt
½ teaspoon Black pepper
¼ teaspoon Nutmeg
2 tablespoons Flour
Divide the peeled potatoes in half. Chop one half of the potatoes into large chunks and place in a microwave-safe bowl with a splash of water. Cover with microwave food cover (with holes to allow steam to escape) or a lid placed so steam can escape. Cook on high for 10 minutes.
When potato chunks are cooked, place in a food processor with the butter and the milk and blitz until smooth. Alternatively, mash these ingredients together by hand. Set aside to cool.
Meanwhile, grate the remaining half of the potatoes using the large holes of a box grater. Place grated potato in a clean linen towel and twist to squeeze out as much moisture as possible.
Combine the grated potato with the Mad Dog 357 Nag Morich Pepper Puree and the remaining ingredients, including the mashed potatoes, but excluding the cooking spray. Mix well.
TIP: If you’re using your hands, be sure to wear gloves to avoid the painful chili burn!
Heat a cast-iron skillet or heavy-bottomed frying pan over medium heat and spray liberally with the cooking spray. Drop spoonfuls of the Mad Dog potato mixture into the hot skillet to make little pancakes.
TIP: Don’t crowd the pan or you won’t be able to easily flip the boxty.
Cook pancakes for about 4 to 5 minutes per side, until beginning to crisp, flipping with a spatula. Remove to a baking sheet. While working with the remaining potato batter, you can place the baking sheet in a 200ºF oven. Serve hot with spring onions – and maybe some cabbage if you want to feel truly Irish.
